Enchiladas are not as intimidating as they may seem. I use Cowboy Spice Company's Sweet Heat and it makes them off the chart tasty and just the perfect heat.
Brown a pound of ground beef. Drain it. Add a tiny can of green chilis and 1 heaping tablespoon of Sweet Heat.
Take a large tortilla, spread the mix down the center in a strip. Sprinkle with Mexican cheese mix or shredded cheddar or monterey jack cheese.
Fold the ends in and then roll it up.
Pour some enchilada sauce into the bottom of a casserole pan and add the enchiladas seam down until packed. Pour enchilada sauce over them, sprinkle with extra cheese.
Cook 375 X 20 mins. Serve with sour cream.
