How To Use Pumpkin Seeds for Taste and Health

The minute you start thinking of gutting a pumpkin for Halloween, the seeds become a necessary evil to scoop out of the shell, but also a HUGE reward.


Let's delve into why you want to keep those seeds -

Pumpkin seeds, also known as pepitas, are a fantastic source of fatty acids, magnesium, antioxidants, with super heart health benefits. They also can contribute to lowering blood pressure and cholesterol.

There are not many things around Halloween time that can tout such flavor AND health!

Roasting: Scoop them out of the pumpkin (consider getting some baking pumpkins for roasted squash to add to quinoa with some nuts and dried cranberries and savory herbs). Rinse the seeds off and dump into boiling water a few minutes. Dry on a towel and then heat oven to 400 degrees. Toss them with some olive oil and salt and cook about 20 minutes (can stir once).

For flavoring you can go savory or sweet.

Consider adding crispy roasted seeds to a soup to add some crunch or to a salad.

I like to keep them in a jar and add to movie homemade trail mix or in my morning oatmeal. How about on bruschetta, granola or casseroles?
