Meals for a week - all chicken based - easy peasy!
8 pack of chicken breasts
frozen peas/carrots
frozen pie shells (2)
BBQ sauce
Pizza Dough
Monterey Jack cheese
chicken bouillon
Italian seasoning
stir fry sauce
romaine lettuce
ceasar salad dressing
2 cans cream of mushroom condensed soup
I crock pot, slow cook overnight 8 breasts with some bouillon. When it's done, I shred half of it, dice half of it.
Meal plans -
1. One container has diced chicken to add to 2 cans cream of chicken soup, peas and carrots in pie shell (use other pie shell to top it) for chicken pot pie. I like to add herbs de province to it or simply thyme, pepper, tiny bit of salt. I store the chicken in the freezer until ready to use.
2. Another container of diced chicken will be used for a stir fry with stir fry sauce and frozen stir fry veggies to put over rice. I store the chicken in the freezer until ready to use.
3. Diced chicken used on romaine lettuce with ceasar dressing and homemade croutons (dice bread and toss with olive oil and Italian seasonings and roast)
4. I find for pulled chicken, mixing 2 sauces is best. I use a traditional molasses one and then add some tangy vinegary Carolina gold. Mix and keep warm for sandwiches. I set some aside for #5.
Other variations are cutting some of the chicken into thin slices, tossing with Italian seasonings and garlic salt for sandwiches.
I also love making sandwich spreads with cooked meats. A block of cream cheese mixed with grated cheese, buffalo sauce, chicken. Or you can do this with the BBQ chicken. You can add things like green onions or herbs.
5. Pizza dough, bbq sauce, shredded bbq chicken, and grated monterey jack cheese pizza.
You can also cook the chicken, pack it into silicone molds and then freeze, remove the blocks into a plastic bag and have on hand in the freezer.
